Aged 18 months. Padano - of the Po river. An innovation born more than one thousand years ago when Cistercian monks needed a natural way of keeping extra milk. The result - a hard cheese with a granular texture - hence the name grana. Grana is not regarded as one of the world's most famous cheeses of Italy.
