Oatcakes Through the Ages: Oatcakes for centuries, have been the traditional Scottish biscuit. They are made almost entirely from oats, the only cereal to flourish in Northern Scotland in bygone days. Traditionally each community had its own mill to grind oats from local crofts and supply oatmeal for every household. These oats formed the highlanders staple diet of porridge and oatcakes. Oatcakes were served with every meal, a tradition which continues today. They are the perfect accompaniment to butter, marmalade, soup, meat and fish dishes, cheese, honey and preserves.
